Garage window trim

What would be the best material to use to trim the interior window trim in a garage that I assume will see much humid weather. I am in southeast North Carolina.

I've seen lots of windows trimmed with just solid wood or mdf painted.
If it's really a concern, they sell composite trim in the same profiles. It's just plastic. Dunno how paint would adhere though.

There is plenty of trim available that is a plastic foam extruded in the trim profile and wrapped in vinyl. This works find for most trim needs and won't be affected by humidity in any way.

I had a bunch of mahogany boards that I ripped, eased the edges with a router and trimmed out the window and door with. Before you jump on me for using a relatively expensive wood- first price out some mahogany trim in the millwork department at the big box stores, then price out maple or oak. It is very comparable. Then consider mahogany is an exterior grade wood that is very stable, needs no finish and still looks great raw. I'm very happy with my decision.
