I had the same problem and here's my solution although it's not for everybody.

I love Gorilla Glue but only use it seldom and have had the same problem you're describing.
As well, I don't use stick welding rods often either and have had issues with the flux coating going bad due to moisture.

We have a food vacuum packer which works great for packaging and saving food.
But, I have vacuumed packed everything from Gorilla Glue, to rods, to some other things with great success.
If only I could vacuum pack gallon paint cans. :)

Yeah it's a bit of a pain but it does the job when things don't like being exposed to air or moisture and aren't used often.

I have tried it in a number of applications. I have never had success with the product and the drying out makes me less inclined to purchase in the future.

Like mentioned smaller bottles and I keep it in the A/C. Moisture is your enemy during the summer months. When it's cool and dry I leave it out side. I like GG over yellow glue as it doesn't run during glue ups and it spreads it when setting.

When you're done with it take the top off and pour about 1/4" of mineral spirits on top of it - it won't mix in - then when you're going to use it pour the mineral spirits off. I read this on one of the wood working sites and have used it ever since and it works.

I squeeze all the air out of the bottle then cap it with the stock cap. My bottle hasn't dried out for almost a year

I keep it from drying by not buying it. In my opinion, it's not a product suited well to any one task. You can glue a lot of different stuff with it, but I'd rather use the right glue for the job than use an all-in-one product. The fact that it foams up and expands makes it no good for finish grade wood, and for metal and other work I'd rather use epoxy. So no gorilla glue for me.

Actually the trick to keeping it from drying out is pretty simple. After you're done using it cap the bottle tight and store it upside down. It won't dry out if you do this.

The OP asked how we keep Gorilla glue from drying out. He, like others, seems happy with what he's using it for.

I squeeze the bottles until there is no air left.
Then I put the lid on tight so the bottle won't expand to its old size. If the product can't get air, it won't expand and get hard. I keep my gorilla glue in the garage where the temperature varies a lot. My glues stay liquid just fine.

X2 that's what I do too. I love Gorilla Products. Gorilla Tape is 10x better than duct tape too. I don't buy duct tape any more ever.

I'm thinking after turning the bottle upside down, vaccuum bag packing the whole thing, then submersing that in a large paint can filled with water with the lid sealed would be even better. - Paul

I've not had much luck. It's just one of those things I buy for each projects. When I open a bottle I try to have several uses. Kinda like caulk. Once opened might as well use it all it throw away.

I put duct tape on my caulk. As long as I use a little in a week or 2, it's always ready to go. Might be a little turd in the tip. Just need to cut back the tip a 1/4".

scotch 33 electrical tape here.
once you pull the hardened booger out the nozzle, the rest is still good, even after an extended time (12+ months)
as far as gg, same as por15.
i might as well throw out the can once opened

Sounds like I might benefit from putting the bottle of glue in a Ziploc bag or similar and push the air out. Simple, easy, convenient.

Way back when it first came out the manufacture suggested freezing it between long uses. I have do this for years and had it work just fine each time I thaw it out. Then I re freeze it.
