The guy just tipped you some good advise or bad, what's the big deal. He is not doing your job. If you find it hurting your feelings, then just say thanks and move on. He is not reporting to the trim police or anything. Jesus, some people just have soft feeling like a little girl.

could be he is trying to improve his work by asking if others believe he is doing the job like a hack.

I see it two ways. Maybe he was out of line saying you did it wrong. You admitted yourself that you agree his suggestion would have been the better way of doing the task. Depending on his tone of voice, I could have taken it as friendly constructive criticism or a guy from another trade that thinks he knows it all and is a jerk...

Bah you are getting paid to install trim. It would have cost time to recut it and not to mention money to make a new piece.
Since this is a job to make money, I think what you did was fine if it is getting painted. The wood will swell or shrink and there will be gaps over time anyway.
I have seen very poor workmanship in terms of trim that even caulk would not fix. You took the time to trim the end so it fits better.
