Is there a special tap for installing new grease fittings?

you just match the tap to the thread pitch. some are 1/4-28, others metric etc

The last fittings that I put in were self tapping.

If you don't already have a threaded hole, match up the thread pitch and go to your tap and die set.

A lot are 1/8 pipe, but the metric ones are simple bolt sized.

Most common we run into at work (construction equipment) are 1/4-28, 1/8-27 NPT, and 1/16-27 NPT. There are some metric sizes as well, but don't run into them as much.
