I just started my floor grinding and everyone says to get it to a 100grit sand paper feel well..
I have concrete thats about 2 years old with not sealer and I started grind with a floor grinder with the stone blocks - I got the most course ones they sell and when I grind the concrete gets the white color and does grind the surface but it is no where near a 100grit feel to it, its still very smooth feeling, is this ok or do I need to do something else?

I usually do not recommend grinding with the stones. We usually recommend the diamond blade.

I agree, no to stones. Yes to diamond blocks.
Find a different machine or vendor
Been there, done that, ..., won't ever again, ...
