How long are we talking?
I have had them under a car for days and even a couple weeks, but I'm not sure I have had them on for more than that.
I am confident that you are not going to hurt them if it just a car on them, not a larger truck or something.

Keep in mind that if the tire goes flat for whatever reason that you may not be able to move the car as the tire could then contac the floor. What do you do then?

If you get a good set of wheel dollies that cover the whole, bottom of the tire, then you are less likely to have that issue.
Will the spot pressure on the tires from go jacks cause issues over time? Could.

What's the concern?

I have 4 go-jacks and two of them are permanently on one car that's awaiting restoration, because they're up against the wall - that's why I got them, to be able to put it against the wall.

It's been on them for, uh, 3.5 years. Been moved a couple of times.

Just having a hard time imagining what failure mode is the concern - it's a simple tool.

That’s what I need for to to jam car along wall . I am not concerned about the jacks more so on tires.

you have 2 bars resting on tires and not a flat floor

He's not worried about the jack or the car itself, he's worried about permanently deforming the tires.

For me, I wouldn't leave them more than a few weeks at most. It probably has as much to do with the tires as anything, though I'm not sure if a softer compound tire would be better or worse (I'd guess worse).

Consider getting a "I don't care" set of tires on a crappy set of wheels if you're going to have it there for a long time.

I’ve used harbor freight furniture dollies to move a car before (pontiac grand prix)you can just put a piece of plywood on top if you’re worried about the tires

If you are not raising and lowering that side of the car, maybe you could just use the much cheaper cradle style dollies, at least for the side that will be inaccessible.
