I have a 40 x64 garage and looking to install a ceiling mounted propane heater. The garage has ceiling fans which are 12 foot high. The building has spray foam. The question that i have been looking to find out is should I consider installing two smaller heaters one on each end of the building? 64 feet seems like quite the distance f to have the heat uniform. I was considering putting the thermostat (connected to both heaters) in the middle of the room so when there was a call for heat both heaters would come on. Any thoughts are appreciated

Radiant tube, parabolic dish, and panel will heat you and objects almost immediately.
Check out the tube types used in Home Depot when it gets cold.
I hate those things in a shop. I used to work in a busy shop, two over head doors at each end. The shop was kept at 50 overnight, turning it up when we working, so it wasn't terribly warm to begin with. Open a door at each end, and all the heated air was gone in a second. Now, put a snow covered car on the lift, and stand under it. So the car gets heat, not you, and drips melt water on you. Horrible. They make sense in a lot of places, I'll admit.

Two 45,000 BTU Lennox, Reznor or ADP unit heaters should do for you. Cheap & easy to install with through the wall venting. The heat in my 40x60 is pretty directional (mini-splits) and to heat evenly, I'd probably do exactly what you're talking about or I'd come up with a means to move the air....
Ventless propane will create moisture which can be a problem in well sealed foam buildings. We use ventless propane as "supplemental heating" when it's seriously cold here (not often) and the heat pumps loose efficiency. Moisture isn't a problem for us because we don't do it very often...
