I just built a 32' x 36' garage with a 12' ceiling. I insulated the foundation with foam board (r-11), the walls are r-21, and the ceiling is r-38. There is a 125k BTU Reznor F series for sale locally that I can get for a steal. The problem is I don't want to oversize. The unit is natural gas and will be hooked up to a thermostat. Any advice would be greatly appreciated.

I am in western NY and my garage is 36 by 48 with a 14 foot ceiling. My floor is uninsulated, the walls and ceiling are both less than yours, but I do have 3 inch thick foam filled overhead doors that are gasketed well. I use a 100,000 BTU Reznor and it works fine. I use two commercial ceiling fans and they make a big difference.

125,000 would be just fine. That may be slightly oversized but in a garage the extra btu's are nice when you open the door, lets it catch up faster. Any other time it just wouldn't run as long of a cycle as a smaller btu unit.

Per 6768 extra fans will be a big help.
Just 1 or 2 20 inch window style fans up high will move a surprising amount of air.
I have had one running on low speed for 8 years. Never turn it off. Keeps the air moving so nothing gets moisture condensing on it.

If you are insinuating that I am a spammer, you are way out of line. When I post a thread, I am looking for feedback within the forum; I have NEVER asked anyone to contact me directly nor have I ever given out my personal e-mail address, as I already receive enough spam as it is.
