Help Building a New Shop

Hello Everyone, My name is Matt. I'm interested in building a pole barn / post frame garage / home. I want a fairly simple 36x48x12 using 36x20 for the house and 36x28 for the garage.
My dream is to have a single bedroom, bathroom, and nice kitchen for my wife. And a useable workshop I can restore ATVs, motorcycles, do some woodwork.
The problem I keep running into is proper insulation for Alabama. I was thinking sheathing on the roof, tar paper, metal roof. And Tyvek wrap, Rock Wool, and drywall for the house and plywood for the garage plus steel ceiling.
Do you have to use drywall all over? I have seen plenty steel walls and ceilings with what appears to be living spaces on here. Please help if you have building experience.

This seems like a detail that is likely set out by your local building code - you should review that and start from there. There is no "need" to have drywall inside your garage from an insulation perspective, OSB is just as viable, but your local code is what you need to be on side with.
