I thought that laying a few of these out would help me decide but i'm struggling to commit to which layout (square, or offset) for my new floor tiles.

Any downside/upside to either of these layouts that might help me make a decision?

Which would you choose?

offset, adds more interest. and if you start to slip on the grout joints it helps to hide that. nothing worse than a grout line that starts to vier off.

The offset looks too busy in those pics, but it is more forgiving. My favorite pattern was the one I used when I tiled our front bathroom. It was 12" and 6" tiles with medallions set in the pattern and it was all set diamond or 45 degrees to the room. It was a bunch of work, even for a small bathroom, but it looks sharp. For a garage, simple is good and I would go without the offset.

I prefer the staggered look. I'm actually looking to doing the same or possibly a 3rd offset running bond. Here's a link to a presentation from the International Masonry Institute talking about grout lines, layout, etc... you might find interesting. Haven't scrolled through the entire thing yet myself but on slide 21, they show a few different layouts. Incidentally, they don't like staggering more than 33%.

Cheers.
