Lots of good advice here. However, the construction of your shop matters when it comes to load - bearing. Hard to provide sound advice if we don't know enough about your build and what is a load-bearing beam in your ceiling. So take it with a grain of salt.
The chain or all-thread suspended shelves is a great idea, if you have something solid enough to anchor the top end onto.
In my old garage, I used a combination of all-thread rod, chain and Unistruct to make my suspended from ceiling shelves (and hog panel for the wire shelf "planks". But first I went into my attic space above the garage and basically reinforced my anchor points on the rafters (basically I made mini-trusses). I also used steel strap to provide better reinforcement for those anchor points, distributing the load across ceiling rafters rather than just one rafter.
