That is absolutely right. A 3/4 inch valve going full open in less than 5 seconds will be wild.
Even a mower muffler will quiet it down quite a bit, but do pipe it out side and away from anything it could hurt with water or grit/rust in the air flow. Mine went from very noisy to just noticeable with just a Briggs and Stratton muffler on it.

I wonder how long it would take for the muffler to rust out being filled with water

The mower muffler I used has been there for thirty years, air compressor use is not nearly as destructive to a muffler that engine use is.

Yup - cold water compared to hot exhaust is a big difference. And most of the water should leave with the air that is coming from the tank.

I would think that depends on the style of muffler. a turbo muffler with the turns inside would cause water to separate out. Plus as soon as the air hits the bigger area and slows down, and liquid would want to fall out of suspension. I do agree that plain water from the air compressor isn't near as bad for it as the moisture in exhaust.
