Does anyone have a couple of color suggestions of color combinations? I was think about a light color possibly white. I was going to epoxy paint the floor black with paint chip. I wanted a few ideas if I should paint the brick the same color as the walls or should I accent it?

If the chimney really was brick, then I'd have said to leave it bare, but it's just concrete block. Paint it to match the walls. If you want a smooth finish, parge it, and then paint it. Sto used to make some premixed **** in a bucket for super thin, easyish stucco work. It's indoors, you could probably just use drywall compound on it.
