Help with new shop interior layout

Hey guys, been checking things out here for a while and thought I would ask for input on interior layout for my new shop. The shop will be 40x60x16 along with a 60x12 lean to off one side and within that lean to, 2 bays will be enclosed and 3 bays will be exterior. For the exterior lean to, I will need 1 bay for hay storage and two bays for horses. On the interior of the building, I am thinking of having all my tools, skid steer, excavator and boat in the bays where the larger doors are at. For the opposite side, I want to build a loft to accommodate sleeping quarters, bathroom and possibly storage. Beneath that, I need to have another bathroom, a cleaning/processing room for fish cleaning/hunting butchering, a walk in cooler, a tack room for the wife's horse stuff. I am having vaulted trusses installed on the end of building where the loft will be. I am planning also on installing a deck with stairs to access the upper level, hence the man door on the second level. This said, I am wondering if I should go 8ft or 9 ft on the slab level to the ceiling height. I have to figure the 10" to 12" of floor framing. This would make my upper level between 7 to 8 ft at walls and go up from there. I think it will end up be 6 ft 6 inch with 9ft ceiling on the lower level. Check out the pictures and let me know your thoughts. Different ideas are always great to hear from guys that have been down this road before. Thanks in advance for your input. Also, I do enjoy reading about various projects and solutions on this site. Lots of great minds post things and cool to see differnet perspectives. Also, I have already tapped into septic and have to have an area for the sewage pump tank, water heater(possibly tankless), etc. I already talked to the power company and have plans to get 200 amp service once the building is up. The crew is framing right now. The crew will get it as far as windows, doors, siding and 2.5" insulation blanket. Slab, electrical, water, etc are all on me.

So any thoughts on interior layout?
