What would be a good thermostat for slab hydronic heat in a pole barn,should I get one with a slab temperature sensor? I probably need a programmable type for delay when opening overhead door also.

The best ones work outside temperature -- they set the temperature of the water. Look up "outdoor reset" .
I have a slab temp sensor in one of my rooms to maintain a warm floor -- not enough to heat the room -- I have supplemental for that -- I just don't want it cold. Slab sensors ar normally to keep the slab from getting too hot.
You can also get a thermostats for radiant that looks just like a normal one -- it has a longer delay to compensate for the slab mass.
Opening a garaged door and closing it will not have any effect on the temp -- it will quickly cover.

I don't want the heat to come on due to blast of cold air hitting thermostat before I close door.

do a search on here someone had installed a thermostat cut out switch when the door is opened.
a radiant thermostat will not do that .. they have a built in delay .. and you don't place the thermostat by the door. Th mass of the floor quickly recovers.
This is not a problem -- the only time you would need a cut off is if the door was open for a long tine

My systems all use outside reset and the thermostat is just a modifier ... google radiant thermostats -- you can buy them from many places. I only have one house with thermostats. Having a radian system turn on and off is really not the way they work best.

Once my garage door closes the mass of heat in the floor quickly returns the room to the desired temp. Radiant systems can't heat up and down based on a door being opened for a short period.
One of my houses has a few odd rooms. One room has a lot of glass -- so I have a thermostat that will lower the water flow to that room when the sun hits it. Another part of the house is stone with less insulation and older historic windows -- so I have a thermostat that will tell he system to increase the water temp to that area -- this is needed on windy days.
