Do you have internet in the shop? I use IP phones hooked into my network with a asterisk server in the basement. Works great.

We use Amazon Alexa "Drop In" feature and it works great.

What we're sort of tap-dancing around here is you can probably solve this by finding wireless devices that work on a different frequency not affected by the interference. (Assuming you're not going to scrap 100 LED bulbs.)
It's likely your intercoms use the old walkie-talkie bands, 27MHz or 49MHz.
If your wifi works in your garage, then there are any number of solutions. You may even find there's a difference in interference issues between 2.4 GHz and 5 GHz wifi, so make sure you understand which band your devices are using.
FRS radios could also work. (462 and 467 MHz)
And if your cell phone works in your garage, then just texting or calling is another possibility.
Also, Amazon and Google are not listening to or recording your boring-*** conversations. Before you crank up the paranoia, do a little research on how these devices actually work and why they can sell them so cheap.

I bought an intercom system that I was going to replace my Nutone, it uses Cat5 cable from the master, the power and voice is carried by the Cat5 cable.
With direct burial cat5 available, I think it would be nice to install the master in the garage and have a remote intercom unit inside the house, in the shed, and the patio, that would let the house occupants to page me because I should be in one of those 3 locations beside the house. (The inside-house unit being one of the further runs).
Wireless stuff works, but something feels great about having a closed, hardwired system.
