I will have 12" overhangs on all sides and I am planning on using normal aluminum soffit Like the stuff on my house. I think you would install the soffitfascia the same way you would on a stick-built house.
My question is how do you attach the soffit to the wall side? On a normal house you would nail F-channel over the sheathing, but a pole barn wall is 10' oc w/ no sheating and is too flimbsy to use. Should I use a 2x4 nailer to attach the soffit to and the maybe a piece of J-channel attached to the bottom side of that? Or is there a special trim piece to make things easier?

Normally you would have a truss hanger (2x12) up there and the top edge of the sideing would be screwed to it. The f would be screwed to it as well. You should have a facia board (1 or 2x6) and the soffit would be nailed or better stapled to the bottom of it. Then the metal facia would go on and the 1" lip on the bottom would cover the nails or stapels. The corners would be built with a "bird box" just as with stick built and then covered with either coil or steel.

is the exterior of the building rib metal? if so i would install that first, and then screw aluminum j-channel over it.
