Romex inside electrical box with plastic clamps.

How much jacket do you leave inside the box?

There are some boxes with plastic clamps that are almost impossible to slip the romex back out (that would be the point..). Anyway hopefully strip the jacket once and correctly, but not leave too much that you cannot push things back into the box.

Do you use a romex plier (or whatever plier) to reach in and strip the jacket, or do you peel it back by hand?

Typically 1/2 inch
Line it up how it goes in box then cut/strip it and stick it in.
If its already fed through the box and jacket needs to be stripped, I'll use a box cutter and peel the jacket off. Again leaving about a 1/2in in the box.

FYI I am doing a "rough in" leaving it long, with maybe few inches sticking out of the box. I am not stripping the jacket until the drywallers done their texture, etc.

EDIT: I'm talking about a panel, not an outlet box.

Can't say about plastic clamps; I hate 'em. I always use metal NM clamps.

I (am amateur) leave between a half inch and maybe three inches of insulation depending on how far it's going in the panel or some other whim. With a new run I most often mark the Romex, pull excess cable into the box, strip with a razor knife down the middle, clip the sheathing and paper, strip the ends, connect, pull back and clamp. If there's no slack it's easy enough to strip in place; maybe that's when I end up leaving longer sheathing on the cable. Also I sometimes end up feeding the bundle of individual wires in and grabbing them with pliers. Metal clamps make it possible to re-do stuff when you don't like how something lies.

Most inspectors require that all of the grounding conductors be made up for the rough inspection.
You can't accomplish that without stripping the jacket

I use a utility knife. Box or panel, as far as I can reach is where the jacket gets stripped.

My method as well, usually ends up at 1/2" to 3/4". I like waiting til after drywallers and painters are done to strip as well, but like mentioned above you can't do that if it's getting inspected. It leaves the wires all nice and clean.
