How should I run this 3 phase belt grinder?

I haven't done anything with VFD's or rotary phase converter's but have done some reading and know there's a lot of options out there. Ideally I'd like to be able to easily adjust speed and have the full rated power. I'd rather stick with name brand equipment as this is a tool that'll be around forever. If that's entirely cost prohibitive I'll consider other options. What should I use?

Agreed. But don't vfd derate slightly?

For that small of a motor, definitely a Vfd. Tons of options at around $250


Could even get 120v input

If you use a three phase input vfd on single phase, yes, but what's derated is the output of the vfd, not the equipment connected. If you use a single phase input vfd, you have the nameplate rating. Either way, you use a vfd that has an output required, eitehr nameplate, or adjusted, and the motor works to the nameplate.

The question I have to ask, is this going to be your only 3 phase piece of equipment or do you see other 3 phase machines in your future? 2-3 machines then the VFD is a reasonable choice. In my case I have 5 or 6 3 phase machines and a couple with two motors on them. In my case the RPC made a better choice for me. If you have the skills the RPC can be built for the price of a VFD and power multiple machines.
