so 12,000 btu= gallons per minute x 500 x delta T, I'm assuming you mean the temperature difference of the water in and out of the coil we know the inlet is 43 deg. How do we no what the leaving temp would be without actually doing it?

yes, delta T of the water. If you had all the details of the heat exchanger, you can do the calculations to determine an approximate temperature, but for this home brew stuff... you just set it up and see what it does.
