Ideas on how to lower ceiling in pole barn

Hello all I am trying to finish in 40x36 of my 40x96 pole barn. It has 12 foot ceilings. I am going to heat, run septic, and water to the finished part. My question is how would I lower my ceiling to say 9 foot or so, so I don't have to run sheet rock up 12' 8". (Its going to be one big open room/area).

What about a suspended acoustical ceiling ? Basic grid with 2'x4' drop in panels.
You could even lay insulation on top of panels.

I did 2x4 grid also. Quick and easy. Full access to everything above it. I cut 2" ridged foam for the for the ceiling panels. It had a white plastic finish on one side and foil on the other. It gave me a finished ceiling look and insulated.
