Here is a question for you "have you EVER heard anyone say "I wish I didn't build so big"?
I got talked into taller than I originally intended, definitely a good move. You WILL fill your shop and wish for more space, so build as big as your budget allows as stated earlier. Of course no matter how big you build you will still fill it and wish for more.
