I know this isnt garage related but Im having a damn love affair with my Shun knives. I got them a few weeks ago as an upgrade to my german ones and I cant get enough of them. Sometimes I just stare at them and their edges. You can cut a potato with just the weight of the knife.

I started buying a knife or two for the wife for christmas starting about two years ago, went with the ken onion shuns. We really like them too!

Are those the knives advertised in a set for $19.95 on TV late at night? The ones that shows some guy cutting a tomato and then the end off a 2X6 board?

Love my Shuns. Was going to go german, then started test driving these and had to do it. Fortunately, Williams Sonoma gift cards that were wedding presents financed them.

I've been a big Kershaw fan for a long time. I've been using their sport knives for 20 years now. Just bought a new scallion recently.

Wish I had know of these. We just got a set of German made Henckels from my parents for a wedding gift. Still very nice, though.

In truth if you know how to properly sharpen a knife (and how to keep it sharp) it isn't necessary to buy uber-expensive blades.

I have a friend who sells Cutco, but my set of $30 knives that were properly sharpened can do everything his set of $2000 knives can do. Granted a quality knife will keep it's edge much longer and not require sharpening nearly as often, but for a basic home user who isn't a chef or using them daily....it isn't a huge issue.

I notice most chefs don't buy knives that are trendy - they just buy good knives regardless of brand. Same is true for cookwear - good chefs just buy "regular" stainless pots without all the fancy coatings etc. Then again they have dishwashers to clean them whereas we at home wash things ourselves, so that probably is the key reasoning.

The 8 piece set is about 600-700 everywhere but I spent 2 weeks looking for good deals and got it for 400!

Good god no.

We have the 10" chef's knife & Alton's paring knife. They are both nice. Do you have a honing steel? You need one to keep it in good shape. I would recommend the F. **** 11" multicut flat steel. Example store but probably cheaper elsewhere

I'm not aware of these being advertised on late night time filler slots.


Of course, I hone them every 3 days. If you have a shun you need a shun steel because its blade is 16 degrees vs 22 making it hard to hone on a normal steel. Shun gives you a guide on their steel.

true, however my 16 degree blade cuts so much better than the 22 degree blades that it makes it more than worth it.

As for sharpening, Shuns have free lifetime sharpening and if they see any slight defects on the blade they will send you a new one.

I do agree with you however, I hate seeing people post on youtube when they buy shuns. most of the time they buy a 10 inch chefs knife which is 4 inches too long for normal use and they don't even hold it correctly! I'm an every day use chef so a good quality knife is of up most importance to me.

shuns are great knives, i have a henkle hallow ground chef's knife that i love. i really find no difference in quality between most of the high end makers. but i didnt like the shun handles and the balance didnt suit me.

most high end chefs have a set of very very good knives, and then everyone else has cheap knives in the kitchen.

My ex got a set of those to replace the German ones I was taking with me. And I must say, those are much better than mine.
