So would the consensus be that they're predominantly used for screws or would you guys say it's worth the extra for one that can be used with sockets as well as an adapter for screws?

They are predominantly used for screws, like steel door hinges, and brake rotor screws on Hondas. If you can get one with a hex tip for accepting screwdriver bits, that would be the most useful.

Edit: I read your post on the previous page with the two examples, and I bet you'll find that the second one actually has a socket that is removable for those insert bits, and not a permanent bit holder.

Would you guys say you almost exclusively use these hand impact screwdrivers on screws? The reason I ask is because I'm looking to buy one and am looking at two that are really only separated by one difference: One has a drive which can be used with sockets as well as bits (via an included adapter) meanwhile the other only accepts bits. Links to each are below. Question is, does anyone ever use these on nuts or bolts? I can't really see that being the case, meaning I'm not sure I see the extra value in an adapter set driver which allows for use with sockets... correct me if I'm wrong.

I vote for door No. 1; get the one with the 3/8 driver. I've used mine both ways many times. I'd say if all you ever wanted it for was maybe gun smith work or that class, then the 1/4" hex might be a better choice.

I'd get the one that takes sockets as well, leave your options open.
These things are so useful I have a 1/2", 3/8" and one of the new screw bit only cheepos just because it was so compact for hard to access screws.
I wouldn't go cheap either because I've seem a few broken ones in my day. The outer casing breaks if you hit them hard on the cheapos.

I use a manual impact driver to deal with bearing retainer screws inside motorcycle engines.

Phillips #3 usually sometimes torx or allen. Better have the long version bits handy as case walls like to get in the way.

I bought a 3/8 drive one at Menards for 8 bucks. Then I went to Napa and picked up the bits for like 10 bucks. Lifetime warranty on the impact driver and bits.
