I assume you are talking about typical pole barn steel. The matching trim would probably be the best option.

Weatherby460 are you covering the whole wall or half? I have been thinking of doing half wall with z trim and upper half drywall

Use the trim that is sold for the same purpose, by the same manufacturer. I pretty sure the sell all the trim you're going to need.

I am doing floor to ceiling. I went to menards and ordered base trim for the base, j channel for around doors, and j channel with frieze for the corners.
