My mom has one instant hot water system for 2 bathrooms it always worked good but now it only works for one tub no sink or anything else. Anyone have any ideas?

Assuming you mean 1 instant heater supplying two adjacent/close together bathrooms.

Could be a bad mixing valve? I've heard that when they go bad they can allow the hot to flow back into the cold supply.

I'm an IT guy and not a plumber (but I did stay at the Holiday Inn Express) so I'm not sure about this and my advice is worth exactly what you paid me for it.

Does she have an "on-demand" water heater or does she have a regular water heater with a circulating pump that runs all the time?

Probably the flow sensor that turns heat on. Flowrate on the tub that still works is high enough to still activate it. Lower flows on the other faucets aren't.

Depending on age and condition of water the heating elements might need cleaning.
I do believe ours call for annual maintenance/cleaning. That is what the valves and fittings at the bottom are for.
