?Insulate room inside metal Bldg

I have an un-insulated (cheap 2.5" square framing) metal building in the Mid Atlantic area, i am putting in a bathroom and possibly bedroom (still arguing with the wife). The intention is to insulate and heat and cool this space at least enough for freeze protection and moisture control. the ceiling of the conditioned space will not go all the way to the roof and will be used for storage. My questions are about insulating along the existing metal walls and what the pro's and con's are for different methods.

Should I;
leave an air gap between the inner room and exterior metal?
spray foam the metal hidden by the interior room, and build interior wall against it?
Use the metal wall as part of the interior room and insulate all with bat insulation?
or some combination of these?

Since I am not planning on insulating all the way to the roof if i insulate 2/3 of the metal wall what happens when the un-insualted section sweats, is there a way to protect the insulated area from condensation developed on the un-insulated area.

The barndo I did years ago, I had the shell insulated as built. The interior was framed with 2x4 flush with the I-beam frame which left a 2-3 inch space between. It worked out just fine. The 2x4 stud walls were insulated with fiberglass bats.
