I have an attached garage, no living space above garage, and it's built with 24" OC trusses. It has double layer 5/8 sheetrock for the ceiling (I'm guessing because the 24" spacing). I can take a photo if that helps, but I'm guessing it can't support hardly any weight? My plan was to add cellulose (maybe R30), but would I be better with fiberglass blown in for the lighter weight?

Double 5/8” is for the fire rating and it will support the weight of ANY insulation...... Choose any insulation you want and go for it!

I have 5/8 ceiling drywall with 24” centers and r60 cellulose with no problems.
