Insulation question on shed and possibly new detached garage

I currently have a shed that I use to store my JD riding mower and other things. I’m starting to use it more and more to work projects so I’m starting to spend time out there. I live in the South and plan on insulating in the next couple of weeks if we don’t move first (I’ll have a detached garage there hence the title).

I want to use R-60 in the ceiling shed since the roof is primarily where heat comes from. But the walls (brick) I’m stuck on. I’ve pretty much decided to not cover the studs want to insulate between them and make shelving there are also with what’s left over.

Is the expanded polystyrene foam with face going to give enough protection from heat and cold as well as my equipment?

Anyone done this? Have pics of this?
