Insulation Strategy

I am in the process of building a 16'x32' detached garage/workshop. Its 2x4 framed and has 11 foot ceilings, and a gable roof. I'm in southeast Texas so high heat and humidity is the biggest concern but Im also interested in a decent amount of sound insulation. I'm planning on getting an oversized Mr. Cool DIY minisplit to cool the space but I'm going back and forth about insulation. I'm between two plans.
1) R-15 rockwool in the walls and R-30 in the ceiling with a vented attic
2) spend the money on spray foam and go ahead and seal in the attic with foam on the roof deck

Attics near me get insanely hot so you are limited in what you can store there unless it's conditioned so insulating it adds alot to the usefullness. But with the high humidity I am concerned about water damage in the roof if it's unvented. Anyone have experience with unvented attics in hot and humid areas?

If the AC/Heater will be running all the time then humidity shouldn't be an issue, the hvac equipment will keep the humidity out. I would go for air sealing and insulating the whole thing, so my vote is for conditioned attic space. You don't have to do that with spray foam though, that may be the easiest method though.

I’ve got 24x24 in South Tx— I did the full spray foam and had the builder add 3” of foam prior to installing the metal roof. My 18 k Mr Cool barely runs. I love it!
