Insulation/venting

Fixing to start my new shop and have a few questions. I will be insulating the walls and putting metal on the ceiling with insulation.

Do I need to put anything on the roof metal or just make sure the "attic" area is properly ventilated? There are no plans for overhangs on eaves or gable but there will be a ridge vent. If I put a gable vent on each end will that be sufficient?

Ridge vent works best when supplied by soffit vents (overhangs)for intakes.
Fresh air comes in at the bottom and gradually rises as the warm air rises and goes out the top.
You won't get much airflow in the middle of the roof if you have gable vents. Air will come in through the gable and go straight up and out the top but only at the very ends. Not much airflow thru the middle.

Does it have to be vented? I assume it does. Any other way to properly ventilate without overhangs?

Depending on where you are located will dictate your needs.

North country with snow fall you will want soffit vent with ridge vent to keep air moving and it cold above the ceiling.

Down South not sure because I live North but I think gable vents on either end with maybe one of them a power vent to keep the hot air moving out.
