Interior-style fan control for dayton shutter mount ?

I have two of these incoming:

I saw some industrial-looking, dayton branded fan speed controllers ... but I wonder, can I just use a plain old Lutron variable fan switch, like this:

I see it controls up to 5amps, and the fan is 2.75A max, so that checks out ... but this switch is infinitely variable, 1 pole ...

A good match ?
