Looking to put a piece of stainless in the center of my bench and on the other 2 sides use the bamboo. So 1st off what's the best way to cut the stainless top with it being a wood overlay? As it needs to be a pretty clean cut.

Thanks

straight edge and a plasma cutter. No matter what, you will need to clean up the edges with a grinder.

Is it an actual top or are you buying a piece of stainless to use. If buying have the metal shop shear it to the size you need if its a pre-made counter top as mentioned Plasma or a cut off wheel.

I'd cut it with a new, small toothed, carbide saw blade in a circular saw. From the back side, and plan on ruining the blade. But, it might last through 3-4- cuts if needed.

You didn't ask, but I'd also use biscuits, or splines to align the bamboo with the wood core.
No biscuit joiner? Use a slot cutter in a router. Just be sure to reference the same face, top, when routing. Cut some splines that fit the cutter you use. A little glue and you won't have a gap to catch grime and the faces will align near perfectly.
