I am building some larger sized hose bibs for large water volumes ... this particular hose bib is 2.5 inch.

So I need some fittings ... nothing special, just a 2.5" galvanized elbow and a 2.5" "reducer T" ...

The 2.5" elbow is pricing out at $65 and the reducing T (reduces to 3/4) costs $121 !!!!!

The guy on the phone said that they can't make larger pipe couplers in the US anymore and they are all imported now and this is what they cost.

Locally, I cannot find 2.5" couplers ... certainly not reducing T parts ...

Is this for real ? Is this what 2.5" galvanized fittings really cost ?

My opinion is that sticking to standard inch sizes (2, 3, 4) is a better way to go than trying to use the "half sizes" such as 2.5". Contacting a local fire suppression sprinkler place may be a better idea because they run thru a lot of these "oddball" sizes in building and retrofitting systems and may get a better price than some web supply looking to cut a fat hog on a single piece they've been warehousing for a long time.

"a reducing T or a side outlet elbow"
Those are not common items, even in smaller sizes.
It would be easier and cheaper to build up some fitting assemblies.

Yes, I am going to see if I can save money by using a normal T and putting reducers on it, rather than a reducing T ...

I picked up a wheelbarrow full of galvanized fittings from 2 inches to 4 inches at a yard sale. All new. I looked up the 4 inch unions and they're over $150!

I'll look up if I have the ones you need, if I do, I'll make you a deal on them, postage will cost more than anything.

I haven't been on GJ long enough to know if this is a faux pas but, I'd keep an eye on FleeBay for such things. Anything can happen there.

Yes, it would be much easier and cheaper to go that route, but this is for fire suppression (it's a hydrant, etc.) and is in a wildfire/wildland area so it needs to not be made of plastic.

Are you planning on having a local FD connecting to this ? If so, yo need to contact them to make sure you are getting the correct stuff...size/thread. Then you might want to check out somebody like Darley, they are a FD supplier.
