Planning a shop and the property has a natural slope to it. I've shot it and will need 6-8" of material to level the bottom side of it. Would you recommend regular fill dirt or 3/4" crushed to bring it to grade? Or any other options

Agreed. "Crusher run" or the like, and it needs to be compacted properly (not just driven over with a skid steer).

It depends on your location and soil type. I brought in 8 trix-axle dump truck loads of fill for my garage. Rented a Remote Control Sheepsfoot Roller for $200 and compacted it in 3-4" lifts. Then added a few inches of crusher run and compacted that. Garage has been up for almost 4 years and not one crack in the concrete.

This. Here we use "road base" for fill/level in most foundations. Apparently it's Caliche or crushed concrete.. Likely because it's the least expensive and available here locally. It gets compacted.

Yep it just depends on the conditions and location.

I just did one. I dug out 18". it was a topsoil with sand underneath it with a lot of water in the sand. Mucked all that out filled it with lime/dirt mixture. then bult up the base level and 6" above grade with 60/40 clay. One the building was complete then an additional partial load of 60/40 was used to bring it to finish grade for concrete slab.
