I would either go flat panel, or the UFO’s. The look I’m going for when it’s all done would suit the UFO’s better. Like a factory or warehouse type look.
Either way, my advice is to use more fixtures with lower output rather than a few very bright ones.

I have a 12’ 8” ceiling in my garage. I temporarily have 4 of those 3 wing LED lights screwed into the porcelain lamp holders. I will upgrade after I paint the ceiling. It’s bright but harsh. No news there.

I did not use these guys when I bought my lights a couple years ago but they have great prices, good warranty. Wished I would have known of them before!
I have 15, LED 5,000 lumens, 5k lights (75,000 lumens) in my 27X20 (4 rows of 3 plus 1 at the walk in and 2 at the bench. I don't have glare in mine. When my OH doors are open 4 lights are essentially blocked.
The top of my ceiling is just a little over 12'. One wall is all white, the others are a mix of studs, old green paneling, shelves, tool box etc.

Are you heart set on the high bay fixtures? My thought is always distribute the light pattern for even lighting.
