Depending where the seams fall and pitch of the ceiling, you may be able to just roll the liner across the peak and back down the other side.

I'd like to do something similar in my new building. It's difficult to find pictures of metal with scissor trusses or vaulted ceilings so I'd be very interested in seeing some pictures or yours at some point.

This is one of the few examples I've found:

Install j channel for both slope at the ridge. Now you can either take trim coil the color of your ceiling and bend it yourself using a raw hide or other soft mallet and the edge of a straight board. This won't look very professional but if you mount it to the peak first and the j channel below it it won't be very visable and will seal up any gaps.

If you want to hang below covering the seam/j channel I would have a sheet metal shop or siding contractor use their brake to bend the trim coil to the profile in the pic STM317 found.

Make sure the hem both edges and that the bend is a few degrees short of the angle the peak is.

Last time I needed 20' of custom profile my local union sheet metal shop did it in five minutes while I waited for 15$. Actually they didn't want to charge but I insisted.

I've seen valley flashing (upside down) used at the peak and then the liner panel butted up to it. Very clean.
Valley flashing is readily available, and is color-matched to the liner panel.
