Makeshift Garage Building... Advice Needed

My wife and I just bought our home, which includes a "three car" garage building and a horse barn/stalls. It's a very old building, but it's structurally sound. It will be used for light maintenance/modification, detailing, and parking for two cars plus a couple ATV's.

The stall nearest to the house was used as a BBQ/cabana and that's where the hot tub is, so we're not messing with that. The back 10ft or so of the second stall was made into a partially finished office. The third stall was used to park a tractor in, and there is no concrete pad, just dirt.

The third stall is 30ft deep, the second stall is 18ft deep. There is currently a non-structural wall separating them which will come down. There is a support pole which will be replaced by a beam.

The final goal is to have it fully insulated and I'll probably put up painted plywood instead of drywall to save some finishing work.

I need advice on a few problems/issues I'm seeing before I start spending any money on this though.

1) Since there is no pad on the third stall, can I have a professional just add and then smooth the transition to the second stall pad? Or does it have to all be laid down at once? I really don't have enough ceiling height for a full-height lift, so that's not a concern, maybe a mid-rise lift at some point, but for now I have a QuickJack that I enjoy using.

2) What can I do about doors? The third stall has a single-car garage door on it now, but honestly I'd rather just have some simple swing out doors or maybe bi-folds or something. I'd like them to be insulated and able to seal pretty well so I can work in there in comfort during the winter and summer (it will be climate controlled with a portable AC/heat unit.

3) Is there anything else in the pictures that can be seen that is a big red-flag? Any cool/fun suggestions?
