Metal Building Questions

Hi, I am building a metal building on my property in Central Florida (Carolina Carports through Alan's) and looking for some ideas. Here are the Specs:

Concrete slab / stem wall foundation (the rear is about 24" lower than the front corner)
24' x 45' building with 10' walls and a 3/12 pitch roof, so 13' overall height.
12 Gauge steel tubing frames 4' on center (170 MPH wind option)
26 gauge walls and roof
2 - Sectional 9x7 garage doors (the installers are just framing the openings and I am having the doors installed by Home Depot (Clopay)...I didn't want roll up doors as I plan to have it air conditioned.
Closed Cell Spray Foam insulation (2" on walls, 3" on roof).
100A electrical service for the garage

For those that have built these already, I am planning on walling off the back 20' or so of the building that will become my home brewery/bar area. For interior walls what have you all done? Just do wall height walls with it being open to the ceiling area? Did you wall it off completely to the roof? I am planning on installing a mini-split, so wondering if I leave the ceiling "open" and just have one mini split for the whole garage, or wall it off completely and use a 2 zone mini-split??

Any other ideas that "you wish you would have thought of" ?

Think about eaves and overhangs. I wish I had gotten around 3' eaves on both buildings. The 10' overhang on the shed worked out very well.

Definitely - Carolina offers at least a foot...

I would have added a 'lean to' along one side and an overhang on the end with the garage door. The overhang would allow the door to remain open during rain events and prevent most rain from blowing in plus provide cover for the man door.
