Need to finish inside of my garage over the coarse of the winter. It is a 40x72 with trusses being 8ft apart. I'm looking at metal. Menards has roofing metal that I can order at 16ft 2in in length 29 gauge. Local Amish where I bought the building from has same thing but in 26 gauge metal. Amish is more because of being thicker metal. I plan on doing plastic and insulation above it. I'm in northern MO. Can I get by with menards or should do I need to go with thicker metal?

29g is more than adequate for the ceiling. Heck my roof that I directly sprayed closed cell foam to is 29g.

You need a deeper rib than the standard rib tin if you want to span 8'.

Ask about R panel

Agreed. I suggest installing joists to reduce the span (assuming your trusses were built with the necessary bottom chord loading for all of this in the first place). I used 29 ga liner panel (which is a R-panel) and spaced my joists at 48". I'll also suggest checking the local metal suppliers. When I did this in '18, the local supplier was 70% of Menards price.

I used Home Depot Ribbed Metal Roofing and love the look, it has a little more personality then the flatter Menards Product.

Also check what the recommended layers above the metal should be, I thought the consensus was not to put plastic above it so any moisture can escape.
