I'll be doing my interior walls and ceiling with metal roofing panels. Just wondering if there's anything in particular that works well for trimming out inside corners and where wall meets ceiling, also around doors and windows. Are there flashing profiles other than just an angle that work well here?

1" J-channel, an lot's of it. The stuff is made just for steel ribbed siding, or if you have a decent brake, you can make your own from aluminum.

Take a look at my build thread, I did some simple galvy sheet metal pieces to finish the edges where wall meets ceiling.

I have a metal ceiling and drywall on my walls. I agree that "J" channel is a good way to trim the edges but in certain areas I used 1"x6" MDF that is painted white. I screwed it to the wall and used it for mounting my air and electrical lines. I could have done that after putting up "J" channel but there was no need to. It finished off the corners quite nicely.

If you can't get J-trim, you could put the ceiling up first and use some drip rail for shingles. **** it up against the metal on the ceiling and screw it to the wall, then use the wall metal to cover up the flange.

You could also use 1x material for a back and a bottom shelf to display your oil can collection, or whatever and use it as an accent.
