I cant see the puddle well so my arc welding is not pretty but when I weld mild steel with a 309L flux coated rod with my cracker box, I make melted butter pretty puddles. Will this combination hold up?

Welding carbon steel with Stainless rod is no issue at all. Just make sure you have adequate penetration and correct heat.

I would qualify that with "309 stainless rod". 309 is designed for carbon to stainless or carbon to carbon. 308 and 316 are not.

309 can be used to weld stainless steel to carbon steel, or certain dissimilar metals together.

Note that you will typically be paying waaay more for 309 filler versus plain mild steel fillers.

while we are on this subject about 309L.... what is the difference with 309H vs 309L , I can't seems to understand the spec sheet.... but the H flows better though.

to paraphrase Lincoln Electric...
the H and L refer to the carbon percentage in the electrode, with “H” electrodes in the high end and “L” electrodes in the low end of the electrode’s carbon range

As the other poster mentioned, the H is for 'higher' carbon percentage in the alloy and the L is for 'lower' carbon percentage in the alloy.

Sometimes you want/need higher carbon in the stainless alloy (better high temperature strength is one main reason for the H variants) and sometimes you want/need lower carbon in the stainless alloy (usually better corrosion resistance than the H variants).

Some stainless fillers are multi-listed too. ex: 308/308L :)

OP, different fillers (especially in stick electrodes) behave differently.

6011 (and its DC version, 6010) are deep penetrating electrodes, 6013 is a low penetration electrode, 7018 is a medium penetration low hydrogen electrode.

If memory serves, 7018 needs a closed root meaning that the weld cant be open to the air on the backside. That is the only gotcha i can think of for that rod.
