I have a old pole building that is not heated in the winter low temps can hit -8F in the winter but not that often. The shop gets humid at times and would like to have some kind of automatic dehumidifier to monitor the building. Would a mini split with dry mode be a good option? I'm connected with possible cold weather affect on the system.

Cold air contains very little moisture. Usually the problem with unheated spaces is temperature changes. When the weather is cold for a while, then warms up you get warmer, wetter air coming in contact with metal and concrete that takes time to warm up and you get condensation.

Usually the solution is to maintain a moderate temperature all of the time Rather than trying to remove moisture from the air. Dehumidification at low temperatures isn’t nearly as easy (or necessary) as it is above 60F

Install and use a heat pump with aux heating if you want dry heat in the winter as well as dehumify any remaining moisture that the trapped air might have held at a higher temperature. You must have a tight building envelope as normal air exchanges should have forced any humidity out of the building thus not having a need for a dehumidifier.
Newer air based heat pumps can run below - 25F but are expensive to those that recover heat from water or geothermal heat sources.

Dehumidifier won't work their not made to work below 45° and at that temp there would be hardly any rh removed. When rh is at a certain % raising the temperature lowers the %.
