I want to mount a 30 amp plug on the exterior of my shop. I will use an exterior, weather proof enclosure. Does this need to be thwn in conduit or can I use romex? The plug will be mounted below my interior panel, but on the outside of the building.

I'm looking at maybe 18" of wire.

Thanks

As long as the wiring jacket is not potentially getting wet, then my answer is the NM-B is fine. The UF wiring is for direct burial and this is not that case. While the THHN/THWN is nt direct burial it pretty much can stand the same kind of wet submerged environment without the jacket breaking down. (Not the terminations, just the middle of an insulated piece of wire.)

Mount it to the exterior of the building meaning the back of the box against siding/brick or whatever?

Yes, back of the box will be mounted through mueller R panel to the wooden stud behind.
