Quick question. I need to mount a quick-disconnect to the exterior of my pole building. It's big enough that it won't sit in a flat spot on the metal. How do you mount it securely over the top of the metal ridges?

I usually build a stand-off of some sort. I have used UHMW plastic as a stand-off as it doesn't rust and leave streaks. Sometimes, I have used small pieces of channel iron painted to match the building.

Fabricate a hat shaped metal stand-off and anchor your fittings accordingly.

Would you mind elaborating on this? I'm trying to picture a "hat shaped stand-off." My apologies if this should be obvious but I'm just not seeing it.

On commercial jobs, I've had the metal building supplier wrap pieces of pressure treated 2x blocking material with brake metal to match the siding and used them as mounting blocks for larger items that span multiple ribs like light fixtures and signage mounts. Metal Panel was cut and flashed around the blocks with head, jamb, and sill details similar to other thru wall penetrations like doors and windows.
