Other than the hydraulic pump- how should I weatherize the cables/pulleys/etc?

Where are you located, and what's your climate? Arizona is going to be different than Alaska.

South-Mississippi. Lotta rain the winter.

I’d be using chain and cable spray lube on cables, shelves and pulleys to prevent corrosion

Also consider a lockable disconnect. Kids would just love to play with a lift like that.

Also store it in whatever position has the hydraulic cylinder fully retracted.

I'm in so cal, lots a sun, had the plastic reservoir crack most likely from UV rays, so if you have that type reservoir be sure to protect it from the sunshine.
