I have 13ft ceilings in my 21x23 garage and have an opportunity to pick up a couple Roberts Gordon 80k btu tube heaters. I live in South Dakota and I would really love to install these as soon as possible, BUT, am I going to cook myself/my equipment? I'd only be using one and selling the other.

See if they have a smaller gas orifice to cut down the btu's.
I put a 80K btu unit in my 24x35 garage with 11' ceilings, but used the 50k orifice. More than enough to keep you toasty, and no, you will not cook yourself. You will love it!
