I second the Opinel-
I don't like spending a lot of money on an everyday carry knife because it leaves you feeling sick if you lose it.
The Opinel Carbone (carbon steel blade) is very easy sharpened. I just give it a 20 second run against the air sander. Currently using a number 8 but it is a bit bulky. I do prefer the number 6.
Be warned the Opinel are have a fairly thin blade and are not a prying knife.
I also picked up a Fallkniven U2 a number of years ago-
It's a very nice no frills knife but I am scared of losing it so rarely gets used.
