This 120v motor can rotated in either direction via a rotary drum switch but unfortunately is not with the machine anymore. I'm getting old and can't decipher what this motor plate is telling me. Can someone please explain on how to connect the wires?

not 100% sure, but if that is a 110V motor only and it is bi-directional rotation.. The diagram will be for rotation.

Usually Z is impedance means there is a Inductance / capacitance / resistance in line, so Z is most likely your start/run coil. where all the goodie run/start caps are connected to.

not sure about U might be the motor winding.

Don't remember who uses that notation, a real motor guy will be able to tell you.

usually reverse the start/run coil will reverse the motor in these 1ph induction motors... so you'll have to find out which one it is or wait for some one that is familiar with the Notation UVW Z ... stuff.

Is there another Tag on that Motor?
That diagram looks like wire connections for 120 or 240 volt operation?
More Info would help
