New Build with some questions

I am having a 28 by 24 garage built with a loft. It will be 28 by 24 feet with an upstairs loft. The roof pitch will have a 12 by 12 pitch. There will 2 dormers on the front with 2 9X7 doors and a side access door. I will also be putting in a bathroom. The garage will set at to low of an elevation behind our house, so I will have to put in a pump for the sewer line. The contractor is doing the concrete and framing along with the electrical and I will have a professional do the plumbing. I will pour the concrete approach and insulate and finish the interior. Any suggestions on how I insulate this? I have never done insulation. How do I insulate the loft as compared to the main floor? Do I insulate the ceiling of the main floor? I live in illinois, so it gets cold here. I do not plan on heating it right away until money allows. I will have to winterize the plumbing for the next year or so until I start heating it. This is all new to me, so any suggestions or help would be appreciated. Here is a rough picture of the finished project and a few pictures of the start of the project. I am a little confused on how and when the plumbing is going in. The contrator and the plumber are not working real well together. Neither seem to like how the other is progressing or doing the job. I think they are both just a little territorial.

I am not planning on parking any cars in here. This will be more for storage, workshop and man cave. Any thoughts or suggestion would be appreciated.

I ould insulate the ceiling / floor area between the upper and lower. One is to maintain heat in either area and another reason is to quiet one area down from the other. It looks like you are building with 2x6's so R19 batt insulation would be in line for studs that size. One thing that you could do to get by through the winter on a build that size is to run either ventless propanes until you get your permament heat system in (you can rent smaller propane tanks) or pick up some oil filled electric radiators. My wife has a 20x20 building and heats it to 70 with two of them when it is 0 degrees outside. Just a thought. As long as you can keep it above freezing, you won't have to winterize. With a couple of the oil filled in the lower level and a couple in the upper level, you should be able to keep it pretty comfortable in there. That is as long as it is well insulated.
BTW...looks like it is going to be a great looking building when completed. Looking forward to updated pics.
